Our most recent fermentation study rewarded us with a medley of navel and blood orange aromatics enhanced by pineapple esters and mildly acidic mid-pallet profile. 4.7% alc/vol

SECRET TECHNIQUE

This (somewhat) newly available yeast strain was isolated from Pure Nacional variety of cacao, believed to be extinct until it was rediscovered in the remote Marañón River Canyon in Peru.
