Spices and herbs contain essential oils that can be very useful in creating unique flavor profiles that would be otherwise impossible to create. There are just too many options to even begin to list here. You can throw almost any herbs or spices into beer, but it takes a gentle touch and a lot of experience to prevent your beer from tasting like pesto. Some of our favorites are coriander, juniper, citrus peel, pink peppercorns, horehound, costmary, paradise seed, quassia, licorice root, vanilla, gentian root, chamomile, rose hips, and (if you want to get technical), hops.
