Yuzu Fierce® features a complex citrus profile from lime to orange flesh with enough clean lactic acidity and juicy fruit ester to create sweet tart backbone. 3.8 % alc/vol

SECRET TECHNIQUES

Yuzu Fierce® is entirely batch soured with our house Lactobacillus strain before being pasteurized and fermented with farmhouse ale yeast. Post fermentation, yuzu and calamansi puree is added to the fermenter for a quick refermentation while maintaining the intense lime and grapefruit characteristics.
