TASTING NOTES
Eille (pronounced El-LAY) is a saison inspired by the Bees Knees cocktail. John really likes drinking gin and is sometimes even inspired by it. The late honey addition creates a delicious honey forward beer, which is good because the French translation of Biere de Miel is “honey beer.” Ask Google Translate. The honey is accented with a mild Chinook dry hop, lemon extract as well as a house combination of gin spices including juniper, chamomile, coriander, and rose hips.
SECRET TECHNIQUES
The late addition of a 55 gallon drum of honey (per 60 barrel tank) suspended on the forklift over the brew deck make for heart stopping day.
