Chicago Craft Gin Week 2023
Blend of funky saisons aged in Sangiovese puncheon with Rangpur limes, foedre aged wild ale finished in a Caledonia Spirits Tom Cat style gin barrel hand selected by Publican, and third wild ale aged in a FEW gin barrel. Bright, sparkling citrus with a deep, herbal spiced nose, mild acidity, and red wine spritz like notes of black cherry and dried cranberry contributed by the Sangiovese puncheon bookended by lingering juniper and tannin from extended aging in gin barrels

This year's label (by the fantastic Phineas X Jones) features our beloved neighbor, Chonkosaurus who some of you may recall enjoyed sunning himself this spring a couple hundred yards down the river from our back patio.
