FUNKY beer for tacos

Tasting Notes

First whiff will let you know this isn't a typical Beer for Tacos with strong earthy notes of damp wood chips that stand out among the complex aromatics of ripened fruits. The funk fades on the mid-palate with a fruit punch of pineapple rind, spritzy lime juice, tart clementine, and tangy orange oil despite the brew containing no fruit whatsoever. A dry finish with a tinge of yogurt-like acidity offers another level of this light but complex beaut. 

Secret Technique

This funked up version of our base wheat beer first underwent a lactic acid souring prior to getting racked in a tequila barrel and a lime gin barrel. Then both barrels were pitched with Brettanomyces bruxellensis and allowed to develop for 5 months. From the barrels, the beer was allowed to bottle condition to continue to develop some of the signature barnyard' characteristics.
