TASTING NOTES
Our boldest hop schedule EVER! Double hop backings Cascade, Citra, and Mosaic hops (more below) brought out the aromatic pleasures of a hop rub (also more below) including sweet, savory and slightly dank aromas with fruit notes of passionfruit, cantaloupe, honeydew, and candied citrus. Tongue coating flavors perform a balancing act of toffee sweetness with palate cleansing bitterness culminating in a flavor profile bold enough to cut through the fat and umami in that juicy, juicy burger.
SECRET TECHNIQUES
Emerging from a vacuum sealed pack of Mosaic whole cone hops came perfectly leafy green vessels of lupulin glory and the inspiration for producing Juicy Beer for Burgers. Brewers assess hop crops by rubbing the cones or pellets between the palms of their hands. That friction heats up the oils from the lupulin gland in the cones to make them more fragrant. After rubbing these glorious Mosaic hop cones our palms were almost dripped with bright yellow oil smelling of fruity and wonderfully dank aromatics. Utilizing these whole cone hops can be tricky… unless you have a hop back.
Juicy Beer for Burgers utilizes a method called hopbacking, which runs hot, but not boiling, beer wort through a bed of whole cone hops. We use this process for a couple other beers we brew. By some stroke of dumb luck, we obtained a second hop back vessel and had the idea to run the two hop back sequentially. And Viola! Double hop backing was born. Running wort through two different hop back vessels unlocked additional hop oils to allow you to experience singular characteristics of these amazing hop cones rather than being bludgeoned by a sack of hops.
