A simple saison base with added layers of lychee and papaya from a Torulaspora delbrueckii fermentation, while the base mixed culture throws notes of nectarine.

Pilsner malt, Flaked wheat, Vienna Malt, Columbia hops, house wild cultures and Torulaspora delbrueckii

Beer nerd facts

Torulaspora delbrueckii is an uncommon yeast sometimes used in the production of white wines to enhance fruity and citrus character. We used it in conjunction with one of our mixed cultures. The yeast name derives from the Latin torus which translates to cushion or bolster.
